Big Brother Sam and Little Sissy Jennifer


Today I had the pleasure meeting Miss Jennifer for the first...

She is a Cutie!

She blessed this world two weeks ago and I couldn't wait to see her.
If you follow my blog you would know her Mother is the manager of the Salon.
Knowing how hectic things can be after a new baby, 
I waited a bit before I made a visit.

The "Big" guy in the picture is Big Brother Sam,
His mother shared, Sam is a little tired of the "taking pictures" thing since Jennifer arrived..
When first asked if he wanted to be in a picture with Jennifer, 
A shake of the head and a very clear "NO" let me know he wasn't having any of it any time soon..
Eventually Sam found his way over to be in a picture:)

I could sit and hold Jennifer all day...! 
She is doing very well with her sleeping and has a very hardy appetite. 
And, I must say...
she already has her Daddy wrapped around her finger..!

Sam decided it's not so bad to have his picture taken...

Since I had a bag filled with goodies for Jennifer, I couldn't forget about her Big Brother..!


I made some Oatmeal Chocolate Chip Sandwich Cookies just for Sam..! 
His Mother says, Sam never met a cookie he didn't like:)

I only had this one picture to show you at the time of this post.
Very simple and very little time needed to create these little cookie sandwiches...

I used a package of Betty Crocker Oatmeal Chocolate Chip Cookie Mix,
made small balls from the dough and baked at 375 for 10-12 mins.
Immediately after placing them on rack or towel to cool,
I flattened them slightly with the spatula so they looked more like a sandwich.
I allowed them to cool, and spread a cream cheese icing on the flat side of one cookie and place 
another cookie flat side, on top of the icing making a Sandwich..

I wanted to keep the cookies small in size for Sam,
especially since I was using two cookies.
during my visit, Sam ate two..!
I think they're a winner.. I told Sam to give back the empty bucket and I'll fill it again:)

Recipe for Icing

8 oz of soft cream cheese.
1/2 stick of soft butter
1 teaspoon of Vanilla
4 cups of Powdered Sugar (10X)

Mix with Mixer cream cheese and butter together until very smooth, 
Add the Vanilla and continue mixing adding the sugar gradually.  Mix until very smooth.
I had way more than I needed for these sandwich cookies, 
but the good thing is...the icing freezes very well.

Happy Valentine's Day




I am so excited to have Sublime Cupcakes in my Home Town of Lititz...!!

The original Sublime Cupcakes is located in Wyomissing, PA in my BFF's neighborhood. 
YES, Of course I've been to the Wyomissing store! Silly question...
And now I have one in my neighborhood as well..!

Last weekend I was invited to a Birthday gathering at a local Italian Restaurant with some friends who like to celebrate.  Before hand they asked if they could bring in their own dessert in honor of the Birthday Lady.  The dessert was a box of 12 different flavored cupcakes from Sublime.  Each Cupcake was cut into four pieces providing many different flavors for each of us to try and indulge.  The flavors and taste were not disappointing...

If your local to my area, its worth the stop..!  

Lucky for me, it's in the area I usually stop at after Church....
And a Starbucks is a stone's throw from Sublime Cupcakes:))

Pepper and Cheese Spread



This Pepper and Cheese spread is one of my favorite and a family favorite..! 


My Mother made this spread often, especially on Sunday afternoons during Football Season..!
This spread can be eaten alone as a Lunch or Lazy Weekend Meal or Served as an 
Appetizer for a special gathering or party.


Recipe and Instructions

Take One to Two Green Peppers removing seeds and clean out inners.  Take pieces of the pepper and Grate them into medium size bowl..  I use my small food processor, draining the pepper juice out by using a strainer to press out the pepper juice.  Add about two cups of any Shredded Sharp Cheese and mix the pepper and cheese well together.  Then add about two TBsp of Mayonnaise, just enough for the pepper and cheese to bind together.
You do not what this spread overly moist, wanting it more on the dry side.
Spread on your favorite Roll or Bun, I do not recommend you use bread unless the bread is a thick slice.  Place under the broiler until melted and lightly brown on top..


Left over spread can be stored in an air tight container for several days...

So Stinkin Good

This Spread doesn't last long in our home..once you try and taste, you'll know why..

Red Velvet Cupcake Bouquet


Cupcake Anyone...!?



 
 I found this amazing Red Velvet Cupcake Recipe a few weeks ago and could not wait to try it...


 When doing research for recipes I want to try or have a special need for.... 
 The ingredients in the recipe and the amount of each ingredient are two major factors in which decide if I will give the recipe a try.....


The one ingredient I looked at for this recipe was the 
amount of Red Food Color needed to give a
beautiful Red that would maintain its brightness after baking.
As you can see, the batter is a beautiful "Red"


And just as beautiful after baking...

I baked the cupcakes in a muffin pan without liners....




After the cupcakes cooled, I placed them in my Tulip Liners..










I wanted to pipe on the Fluffy Icing after they were placed in the Tulip Liners,
this would allow me to pipe high with a significant amount of Icing and keep them pretty...


The "one" thing I really like about the Tulip Liners,
you can easily pull the liners away to eat and have a nice 
surface area to eat your treat...with a fork:)

Ingredients

For the Cream Cheese Frosting:

  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar

Directions

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.
For the Cream Cheese Frosting:
In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Garlic Pull Away Bread



I'm not sure where I found this recipe,
for this incredibly delicious bread..!?

It. Is. So. Super. Easy...

Take pre-made frozen loafs of bread.  Thaw  the bread.
Cut in one inch slices just as you slice a piece of bread from the loaf.
Cut the the one inch pieces in 1/3.

Melt a 1/4 cup of butter in glass bowl
Add:
1 TBsp of Fresh or Dried Parsely
1 tsp of Garlic Powder
1/4 tsp of Garlic Salt

Mix together

Add a few pieces of the cut bread and coat evenly, place in a Greased Bread Baking Pan.
Continue to coat all bread pieces with butter mix and evenly place in pan.
Cover with towel for one hour to let it rise a bit.

Bake at 350 for 30 mins. 


 I made three loafs of this bread...
One in a single loaf bread pan.  Two loafs in a baking dish.
The two loafs I baked in the baking dish, I kept a bit larger in size per piece.
Only cutting the one inch piece in half.

This bread is tasty alone or with your favorite Pasta Dish.
I ate mine today with the Lasagna I made...


Three Lasagna Pans made also today...
Two will be given for meals this week, one going to my BFF and family while one recuperates from surgery
and the other will be given to the Manager of my Business.
She is having her second baby on Tuesday...Enough Said 

Each will be getting a bag of the Garlic Bread Pull Aways...

The pans of Lasagna and Bread were  securely wrapped for the freezer until time of delivery..

I'm still deciding on what treat to send along....
My thoughts are leaning towards Red Velvet Cuppies since this is VDay Month...!!


I used my  Kitchen Aid Mixer for the first today:)) to mix the cheese sauce for the Lasagna.

 I can already see a real Love Relationship starting...!!
