Flat Bread Bruschetta




My Own Version of Flat Bread Bruschetta

I had such a craving for bruschetta last weekend,
but did not want to eat the thick bread one usually makes 
bruschetta with..

So..I had some Pillsbury Pizza Dough
on hand and thought....
Why Not!!?


 Take Pizza Dough and spread evenly onto a Sprayed Jelly Roll Pan


 Spread Olive Oil on to the top of the Pizza Dough..

 Thinly slice tomatoes and place on top of dough and olive oil
and very lightly sprinkled some more olive oil on top of the tomatoes..

 I then generously sprinkled a Dry Italian Herbs and Spices Mix on top....
(I purchase my dry herbs n spices at a local Farmers Market)
And Salt n Pepper..
 Place in oven on Middle Rack at 350 degrees for 20 mins...
I then increased the temperature to what the directions called for
on the Pillsbury Container Instructions for pizza,
Which was 450 degrees and baked for 10mins....
 Immediately after removing from the oven,
I again very generously sprinkled shredded Cheese on top....
The cheese melted very quickly..

 I would recommend you let it set for a min or two before cutting,
my crew couldn't wait very long...
the bruschetta was cut probably before the last crinkle
of cheese hit the top....

 This is the amount that was left.....

This was so easy and quick to toss together,
and the taste...
My mouth is salivating as I write this...

Formal Dressed Easter Egg......

  





shared a Tutorial last year on how to make these amazing Easter Eggs..

The Eggs are on my "Must Do List" for this Easter...
I thought I would share now if your interested in also making them for Easter:))





NeckTie Easter Eggs...

This very simple and Spectacular Easter Egg Creation
takes very little prep time and materials...

What you need...

Silk Neck Ties...Must be silk.  You can get silk ties at a local
discount store or thrift store if you don't have any laying around...


Take a Silk Tie and cut to fit around a egg,
tying it very tightly with string at the top...
 After you tie the neck ties around the egg,
do the same with a white cotton pillow case...
Tying both the ties and the pillow case very tightly
with a piece of string...


 Place the eggs in a pot of water with a 1/4 cup of Vinegar,
place a lid on pot and cook on medium 
for 20 minutes after water comes to a boil...


 Easter Egg Master Piece..!

And WhaLa...

You have Beautiful Easter Eggs to Display...
Your Friends will think you spent hours painting
these eggs...

as I walked from end of the house to the

Beautiful Shayna, Super Hero Seth and Little Man Keegan...

 
Rarely do I get to chat with my 
Niece and Nephews  in TX,
all on the same day during the very same phone call....

With all three being very active
and usually going in different directions,
my brother, their father and I chat mostly
while he is waiting for one to finish whatever
practice for whichever sport they are currently
involved in....

Today I called Mike to share some
very unusual and comical event happenings during the
past several days...
What I mean as "Comical",
you either chose to laugh or cry....
I try to find the Comical side of the situation..!
Any Hoo....I hit the jack pot
today when all three kids were home
for Spring Break..!

I was able to chat a bit with 
Beautiful Shayna, Super Hero Seth 
and Little Man Keegan!


Shayna being the oldest and only girl,
there is alot of "girl" power around the house...
Seth is next in line with his
never ending imagination and memory,
nothing gets past this guy....Nothing!
And then bring up the rear is Little Man, Keegan..
He is the spunkiest and most determined Little guy,
who is so excited to be playing T Ball this spring..!
During my chat with Keegan,
Aunt Kathy was reminded Little Man's Birthday is
April 13th:)  and he likes McDonald's Cheeseburgers...!
That's Easy!

Walking Past The Scale....



Chocolate Peanut Butter Trifle

I have not created this spectacular 
and Sin Confessing Dessert,
However....
I can promise you,
It's at the top of my list to
consume and more than likely devour 
during a Summer Time,
By the Pool Picnic
Event at my home....!!

I'm sure I won't have any difficulties
finding others willing to indulge with me..!!

Plans have already been discussed
for a Seafood Bake...
This Dessert would be a nice 
finish to a "Healthy" Dinner..?!!

CAKE:
1-3/4 cups all-purpose flour (or 1-3/4 cups minus 3-1/2 Tbl whole wheat flour)
1-2/3 cup sugar
3/4 cup baking cocoa
1-1/2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 cup fat-free milk
2 eggs
1/4 cup canola oil
2 teaspoons vanilla extract
1 cup boiling water
CREAMY PEANUT BUTTER FILLING:
1-3/4 cups cold fat-free milk
1 package (3.4 ounce)  instant vanilla pudding mix
3/4 cup creamy peanut butter (I used Jiff Natural)
TOPPING:
2 oz milk chocolate chips
  • Coat two 9-in. round baking pans with cooking spray; line with waxed paper. Coat the paper with cooking spray and sprinkle with flour; set aside.
  • In a large bowl, combine the first six ingredients. In a small bowl, combine the milk, egg substitute, oil and vanilla; add to flour mixture. Beat for 2 minutes. Stir in water. Pour into prepared pans.
  • Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pans to wire racks. Cool completely.
  • In a large bowl, whisk 1-3/4 cups milk and pudding mix for 2 minutes; let stand 2 minutes or until soft-set. Fold in peanut butter. Add a little milk (2Tbl), if needed.
  • Place bottom layer in trifle bowl (or glass bowl); spread half of filling over cake layer; top with second layer and remaining filling. Chill for 1 hour or until serving.
  • For topping, in a microwave, melt chocolate. Stir until smooth. Drizzle on top of trifle before serving.

A King, Baby and Belles



The final days of Mardi Gras
and 
Fat Tuesday are approaching..!

I have on my bucket list,
to attend Mardi Gras in this lifetime...
There is something about New Orleans that totally
intrigues me..!
 
Mardi Gras King Cake is similar to coffee cake...
The decorations of sugars in the royal colors of purple (justice), green (faith), and gold (power), honor the three kings who visited the Christ child on Epiphany, the 12th day after Christmas.Also known as King's Day, Mardi Gras marks the start of merrymaking that continues until the grand finale on Fat Tuesday, which is the day before Ash Wednesday. The Baby placed in the cake
brings good luck and wealth to the one who finds it...


I must confess, there is so much about the
"Old South" that has always sparked
an interest in me...
Maybe I was a Southern Belle in a past life?,
I would not be disappointed to find out if I had been...
Of Coarse, I would have been the 
"Rebel Southern Belle"
Appearing to be that sweet and quiet Belle,
who learned to use her Charm and Ability at
the right time for her advantage...

None the less,
I would have been dressed in the finest of gowns,
entertained with the grandest of Balls
and been catered to in every way 
known to a Southern Belle..
(A Girl can dream, can't she?)

Rules Of The Southern Belle
  
-Never wear white shoes before Easter or after Labor Day except if your a Bride.
-Thank you notes are a necessary component of being gracious and appreciative.
-Never chew gum or smoke on the street
-Never show anger in public. Smile and act like a Lady.
-Act helpless and confused when it's to your advantage;
never let them know how clever and capable you really are...
-Charm, Charm, Charm. 
-Be elegant and graceful


We have all seen "Gone With The Wind"....
the movie a true romantic never tires of watching.
My favorite movie portraying that time period 
is the Epic "North and South"....

During a vacation to Myrtle Beach,
I toured the Plantation that was used in the movie
as the working plantation of the Southern Main Family
and also toured Charleston,
on a walking tour and carriage ride.
There in Charleston is the home the Northern Hazard Family
used as their Pennsylvania Home in the movie...
I hope to revisit this area some day,
and along the way stopping in Savannah, GA.
Many friends have shared their love for Savannah,
and tell me I would love it, too...!!

The charm and beauty of the Old South
is one to be respected...

Road Trip

I can't even begin to tell you how much
I can not wait for spring and summer time..!

Last summer went by way too quickly,
getting my business started kept me 
and those around me very busy..!

So My beach time was cut short,
and I was not able to jaunt away for my
customary beach time....
 I am hoping to make a spring trip to 
my favorite crab shack and get in some 
sun and beach time...!

I just love the smell of the ocean and beach...!
And those huge Chocolate Strawberries you can only
find on the boardwalk...
o...and the boardwalk fries, too:)

So glad we are heading into Spring/Summer..!
