Celebrate like an Irishman...

What will you be doing to Celebrate like the Irish...??

Here is a recipe I found for Irish Potato Candy that sounds Yummmy..
It calls for Chocolate!!
So it has to be good, Right!?


IRISH POTATO CANDY
2/3 c. cold mashed potato
4 c. confectioners' sugar
2 tbsp. butter
1/2 tsp. salt
Vanilla flavoring
4 c. shredded coconut
Semi-sweet chocolate, melted
Mix potato and sugar; add butter, vanilla, salt and coconut. Blend well. Press mixture into ungreased baking dish (medium size) so that mixture is 1 inch thick. Chill until firm. Cut into squares and dip into chocolate or pour melted chocolate over mixture.

  2. Oh my, I thought for a minute you were going to know my Mom's candy recipe, I would so love to know were it came from. All I remember is her making it for us every yr at Christmas. But with her's you use potato and peanut butter.
    Will have to give this one a try.

  3. POTATO - PEANUT BUTTER CANDY

    1 lg. potato, cooked & peeled
    Confectioners' sugar
    Peanut butter

    Mash potato with sugar, may take 1 pound or more. Mix until stiff. Sprinkle confectioners' sugar on board. Roll out like dough. Spread with peanut butter. Roll up like jelly roll. Cut in slices.

  4. Thanks, you are the only person I have run into that didn't look at me like I'd lost my mine when I told about making this candy. We loved it. Mom learned to make it in New Orleans in the early 40's from an Irish Neighbor. I think she also put 1 teaspoon of vanilla favoring and she even put red and green food coloring into it, for Christmas.
