ReplyDeleteOh my, I thought for a minute you were going to know my Mom's candy recipe, I would so love to know were it came from. All I remember is her making it for us every yr at Christmas. But with her's you use potato and peanut butter.
ReplyDeleteWill have to give this one a try.
POTATO - PEANUT BUTTER CANDY
ReplyDelete1 lg. potato, cooked & peeled
Confectioners' sugar
Peanut butter
Mash potato with sugar, may take 1 pound or more. Mix until stiff. Sprinkle confectioners' sugar on board. Roll out like dough. Spread with peanut butter. Roll up like jelly roll. Cut in slices.
Thanks, you are the only person I have run into that didn't look at me like I'd lost my mine when I told about making this candy. We loved it. Mom learned to make it in New Orleans in the early 40's from an Irish Neighbor. I think she also put 1 teaspoon of vanilla favoring and she even put red and green food coloring into it, for Christmas.
